Established in 2022, we are a family-owned and operated ice cream business based in Cache Valley, Utah. We specialize in hand dipping frozen desserts in gourmet chocolate! At Merrill’s, we love to spread joy-one dipped treat at a time.
What We Offer!
Ice Cream Bars
Our ice cream bars have 100% real vanilla and are so delicious dipped in gourmet chocolate. Try it with plain chocolate or finish it off with our large selection of delicious toppings and drizzles. Ice cream is better on a stick!
Dipped Cheesecake
A large piece of New York style cheesecake on a stick and dipped in gourmet chocolate. This rich dessert is one you just have to try! Finished off with yummy toppings and drizzles-this will quickly become your new favorite treat.
Frozen Bananas
Frozen bananas dipped in chocolate are a beloved treat by many. Try it with peanuts or your topping of choice for an incredible, refreshing goody you’ll be craving more of!
Cocoa Floats (Seasonal)
Have you ever tried hot chocolate WITH ice cream?! Well now is your chance! We put a generous scoop of ice cream in one of our delicious flavored hot chocolates and it melts to make it the perfect foamy consistency.

What is dipped ice cream?
We take our frozen ice cream bars and dip them into our warmed gourmet chocolate. It creates a delicious chocolate coating that is SO good on its own and even better with toppings!
Where can we find you?
We are a food truck primarily at events & catering but do have some routine operating hours. The absolute best place to find where we are each week is our social media. We always update our locations and hours!
Do you cater events, and can you customize the menu?
Yes, absolutely! It is one our specialties and something we pride ourselves on. Please visit our “catering” section for more details.
How often do flavors change?
We always keep a few of our most popular toppings on our menu but we love to rotate our different toppings for different events and seasons. We love creating new flavors by combining multiple toppings! We never skimp on toppings and put so much care into curating the best flavors for our customers.
Can Merrill's attend our event/function?
We assess each individual event to see if it works with our schedule and makes sense for us to attend. Events are a lot of time and effort to prepare for and our schedule is often very busy so we cannot attend every one unfortunately. See our “event” section to put in a request to have us at your event!
OUR STORY
Annie Adams and Travis Van Leeuwen met while attending Utah State University in 2010. Travis enjoyed playing football for the Aggies for five seasons. After graduating from USU and marrying in 2014-they spent some time living and working in Annie’s hometown in Southern California and Travis’s hometown in Utah County before eventually returning to the place that held their hearts-Cache Valley. Annie’s ancestors had helped settle the Cache Valley area long ago and it felt right to return. In 2022 when her father, Allen (aka Papu), came up with the idea to create a hand dipped ice cream business, it was only right to name it Merrill’s to honor the last name held by their Cache Valley ancestors.
Annie’s mother, Marie (aka Yia yia), jumped on board with her incredible culinary talent to complete the team. Once the idea was born, the Van Leeuwens and Adams together worked around the clock to retrofit and perfect their food truck in time for their first summer. Each family member was able to use their unique talents to make it happen. Their first summer was a success and the response to their hand dipped ice cream was incredible.
Merrill’s Ice Cream is still completely family-owned and operated. It is our passion and something we love dearly, and we hope that it is felt through our friendly customer service. We look forward to having you try the unique tasty treats our family has worked hard to create!
