We take our frozen ice cream bars and dip them into our warmed gourmet chocolate. It creates a delicious chocolate coating that is SO good on its own and even better with toppings!
We are a food truck primarily at events & catering but do have some routine operating hours. The absolute best place to find where we are each week is our social media. We always update our locations and hours!

We always keep a few of our most popular toppings on our menu but we love to rotate our different toppings for different events and seasons. We love creating new flavors by combining multiple toppings! We never skimp on toppings and put so much care into curating the best flavors for our customers.
We assess each individual event to see if it works with our schedule and makes sense for us to attend. Events are a lot of time and effort to prepare for and our schedule is often very busy so we cannot attend every one unfortunately. OUR STORY
Annie Adams and Travis Van Leeuwen met while attending Utah State University in 2010. Travis enjoyed playing football for the Aggies for five seasons. After graduating from USU and marrying in 2014-they spent some time living and working in Annie’s hometown in Southern California and Travis’s hometown in Utah County before eventually returning to the place that held their hearts-Cache Valley. Annie’s ancestors had helped settle the Cache Valley area long ago and it felt right to return. In 2022 when her father, Allen (aka Papu), came up with the idea to create a hand dipped ice cream business, it was only right to name it Merrill’s to honor the last name held by their Cache Valley ancestors.
Annie’s mother, Marie (aka Yia yia), jumped on board with her incredible culinary talent to complete the team. Once the idea was born, the Van Leeuwens and Adams together worked around the clock to retrofit and perfect their food truck in time for their first summer. Each family member was able to use their unique talents to make it happen. Their first summer was a success and the response to their hand dipped ice cream was incredible.
Merrill’s Ice Cream is still completely family-owned and operated. It is our passion and something we love dearly, and we hope that it is felt through our friendly customer service. We look forward to having you try the unique tasty treats our family has worked hard to create!
